Ragi Flour is a reddish flour that is also known as red millet flour or finger millet flour. Its earthly aroma and bittersweet aftertaste are commonly mixed with other flours to make bread. In South India, it is mixed with water, grated coconut, sugar, and fried cashews to make a pudding called Raji Puttu. It contains a rich amount of nutritious vitamins and minerals. Ragi flour is also popular in many parts of Africa.
Ragi flour is prepared by either crushing dried grains or spouting, drying, and then grinding them. The good thing is that Ragi is a rich source of good carbohydrates and since it is too tiny to be polished or processed it is mostly consumed in its purest form.
